My very favorite cookies

Grandma Peterson's Snickerdoodles


1 c. Crisco

1 1/2 c. sugar

2 eggs

2 3/4 c. flour

2 t. cream of tartar

1 t. baking soda

1/4 t. salt

1 t. vanilla


Preheat oven to 400 degrees. Mix shortening, sugar and eggs until fluffy. Add vanilla. Blend dry ingredients together (I only do 2 cups of flour in this step because 2 3/4 is sometimes too much) and add to wet ingredients. If dough is still sticky, add flour in 1/4 c. increments until dough seems right for cookies. Shape into 1 inch balls and roll in cinnamon and sugar. Bake 8-10 minutes. (Makes 3 dozen about)

Kneaders Sugar cookie recipe

I saw this on GTU and wanted to try the recipe....I love my own sugar cookie recipe, but this looked a little different with the honey and lemon flavor in it.
Always fun to try a new recipe especially when it is something sweet.

2 cups butter
2 1/4 cups sugar

4 large eggs
1 cup milk

7 3/4 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp lemon flavor
1/2 tsp salt
1/4 tsp nutmeg
1 Tbsp honey

1. Cream together butter and sugar until fluffy.
2. Add eggs, then milk. Scrape the sides of the bowl often.
3. Stir in remaining ingredients. Dough will be soft and sticky.
4. Place dough on well floured pastry cloth or workspace.
5. Knead in just enough flour to make dough workable. Dough will be very soft. It is best to knead with a rolling motion so you have a smooth surface and you will not get cracks on the tops of your cookies.
6. Gently roll out to 3/8 inch thick.
7. Cut into desired shapes and place on baking sheet lined with parchment.
8. Bake at 325 for 10-12 minutes or until just the edges barely start to change colors. Makes approx. 4 dozen.

Icing

4 1/2 cups powdered sugar
4 Tbsp corn syrup
3 Tbsp milk
1/4 tsp lemon flavor

1. Mix together all ingredients until smooth.

Dip cookie in icing and smooth with side of palm of hand. Let set.

(FYI....this is a very runny icing, that is why they use their hands...I think its kind of gross, guess I'm not a true baker.)

Chewy Oatmeal Raisin Cookies



2 tablespoons whiskey or rum*
2/3 cup raisins*
8 tablespoons unsalted butter, at room temperature
1/4 cup  unsweetened applesauce
3/4 cup firmly packed brown sugar
3/4 cup granulated sugar
1/2 teaspoon salt
1 large egg
1 large egg white
1/4 cup milk
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
2 cups old fashioned oats


1.Preheat oven to 350. Grease a cookie sheet. Sprinkle the whiskey or run over the raisins in a bowl and let stand while you assemble the batter. * 

2.Beat the butter, applesauce, sugars and salt on medium high speed until light and fluffy, 2 to 3 minutes. Add the egg and white, milk and vanilla.  

3.In a seperate medium bowl, whisk together flour, baking soda and cinnamon. Add to the batter and beat just until flour is absorbed. Gently fold in oats. 

4.Scoop out batter by rounded teaspoonfuls onto the prepared bakign sheets, 1 1/2 inches apart. Bake until the cookies are set but still soft in the centers and beginning to brown on the edges, 13 to 18 minutes. 

5.Let cool on a wire rack. ENJOY!

*I omitted the rum-soaked raisins and swapped them out for 1 cup chocolate chips. 
** I added an additional 1/4 cup flour for fluffier cookies.

in-law cookies

1/2 cup shortening

1/2 cup butter
1/4 cup sugar
3/4 cup brown sugar
1 small package vanilla pudding (1/4 cup of it)
2 eggs 
1 tsp vanilla
1 tsp baking soda
2 1/2 cups flour
1 cup chopped nuts
1 12 oz package semi-sweet chocolate chips


Cream butter and sugar, then eggs. Add vanilla and pudding mix. Then combine dry ingredients, chocolate and nuts. Bake for 9-10 minutes at 350. These cookies are moist, soft, and have a subtle vanilla flavor. The recipe is created from my Father-in-law, Randy, hence the name "in-law cookies"

Peanut Butter Kiss Cookies



1 14 oz can sweetened condensed milk
3/4 cup creamy peanut butter
1 tsp vanilla
2 cups bisquick original baking mix


 (you will also need about 1/3 cup sugar and 36 unwrapped Hersheys Kisses)

Combine first four ingredients and mix well. Roll into balls. Drop and roll balls into sugar. Bake at 375 for 8-10 minutes. They are ready to come out of the oven when the dough has cracked. Immediately press unwrapped chocolate kisses into the center of cookie and let cool.

Chocolate Chip Caramel Cookie Squares

This recipe won the Pillsbury contest a few years ago and is so easy and yummy!!


- 1 roll Pillsbury Create 'N Bake chocolate chip cookies
- 1 cup of quick cooking oats
- 2/3 cup of caramel ... I normally add a little more 
- 5 TBS of flour
- 1 teaspoon of vanilla
- 3/4 cup of chopped walnuts
- 1 cup of semi-sweet chocolate chips

1)Preheat oven to 350.  In a large bowl break up cookie dough and  stir in oats.  Reserve 1/2 cup of the dough for topping.  In an ungreased pan press remaining dough evenly in bottom for crust
2) Bake 10-12 mins
3) In a small bowl mix caramel, flour, and vanilla until well blended.  Sprinkle walnuts and chocolate chips evenly over crust.  Drizzle evenly with caramel mixture.  Crumble rest of dough over caramel.
4) Bake 20-25 mins

Chocolate Chip Cookies

I promised Amber I would post this recipe. Sorry I don't have any pictures. ENJOY!

1 cup Brown Sugar
3/4 cup White Sugar
2 cubes Butter (margarine doesn't work so well!)
2 Eggs
1 tsp. Vanilla
3 cups Flour
1tsp. Baking soda
1/2 tsp. Salt
Chocolate Chips as many as you want!

Mix brown and white sugar then add butter and cream together. Add eggs and vanilla, mix. Mix flour soda and salt together first, then add in slowly until well combined. Bake at 375 for 10-12 minutes (my oven runs a little hot so I bake mine at 350 instead).

Coconut Macaroons

2 1/2 to 3 cups flaked coconut
2/3 cup sugar
4 Tablespoons flour
1/4 tsp salt
4 egg whites
1 tsp vanilla
1 tsp almond extract
3/4 cup chopped pecans
1 cup semisweet chocolate chips
1/2 tsp butter and vanilla flavor (optional)

Combine the coconut, sugar, flour and salt. Stir in chocolate chips and pecans. Add egg whites and extracts stirring gently. It will seem dry at first but just keep stirring and folding until it's moist all the way through. 

Drop by teaspoonfuls onto a cookie sheet lined with parchment paper. Bake at 325 for 18-20 minutes.

*I have to admit I copied this recipe from another blog that I love, called pimp my dinner. I have a small obsession with anything coconut, and I LOVE these cookies, so I had to share them with all of you.

Cookie Salad



1/2 cup buttermilk
1 small package of instant vanilla pudding
1 large container of cool whip
2 cans mandarin oranges
2 ripe bananas
1 apple
1 can pineapple chunks (optional)
1/2 package fudge striped cookies broken into a few pieces
*Stir pudding into buttermilk. Fold in Cool Whip. Stir drained fruit into mixture. Just before serving stir in cookie peices (to keep them from getting soft)

Chocolate Chocolate Chip Cookies

Combine and then mix until creamy:
1 c. butter
1 c. brown sugar
1/2 c. sugar
1 tsp. vanilla
2 eggs

Add and then mix until blended:
1 1/4 c. flour (1 1/2-3/4)
1 c. cococa
1 tsp. baking soda
1/2 tsp. salt

Add and then mix:
1 3/4 c. quick oats (oatmeal)
1 package chocolate chips
1 c. chopped walnuts (optional)

Bake at 350 for 9-10 minutes

White Chocolate and Cranberry Cookies

1/2 C. butter, softened

1/2 C. packed brown sugar
1/2 C. white sugar
1 egg
1 tablespoon vanilla
1 1/2 C. flour
1/2 tsp. baking soda
3/4 C. white chocolate chips
1 C. dried cranberries

Preheat oven to 375 degrees.  In a large bowl, cream together the butter, brown sugar and white sugar until smooth.  Beat in the egg and vanilla.  Combine the flour and baking soda; stir into the sugar mixture.  Mix in the white choc. chips and cranberries.  Drop by heaping spoonfuls onto cookie sheets.  Bake 8-10 min.

No Bake Cookies

These Cookies don't have all the sugar that normal "no bake cookies" have.
They are so easy and we feel like they are a healthier cookie when we are craving the sweets.

2 C. oatmeal
1 C. Peanut Butter
1 C. Raw Maple Syrup
1/2 C. Cocoa Powder
vanilla

mix and spoon balls on to wax paper. They do take a while to harden, we just enjoy them when they are still sticky. we are too impatient to wait for them.

Award-Winning Chocolate Chip Cookies

  • 2 1/4 C. flour
  • 1 tsp. baking soda (mix together and set aside)
  • 1 C. butter (softened)
  • 3/4 C. brown sugar
  • 1/4 C. white sugar (cream together then add...)
  • 3.4 oz. vanilla pudding mix
  • 2 eggs
  • 1 tsp. vanilla
  • 2 C. chocolate chips ( I like to do 1 C. chocolate chips, 1 C. butterscotch chips)
  • 1 C. chopped nuts (optional)
  • Mix all ingredients together and bake 10-12 minutes @ 350 degrees

Oreo Cookies

1 package of devil's food cake mix

3/4 cup of butter
2 eggs
3 TB of flour
1 tub of Betty Crocker's creamy cream cheese frosting

Melt butter and then add the cake mix, eggs, & flour.  Stir until mixed well.  Drop by spoonfuls on greased cookie sheet and bake at 350 for 8-10 mins.  Let cool and then frost and match up cookies to make into oreos!

lemon butter cookies



Cookie ingredients:
1 cup butter
1/2 cup powdered sugar
2/3 cup cornstarch
1 cup flour


Directions:
Cream butter and sugar. Stir in cornstarch and flour. Drop by teaspoonfuls on a cookie sheet. Bake at 325 degrees for 15 minutes. Cool. 


Frosting ingredients:
1/2 cup butter, melted
2 tablespoons lemon juice
rind of one lemon, grated
2 1/2 to 3 cups powdered sugar


Directions:
Combine frosting ingredients. Spread on cooled cookies. 
makes 2 1/2 dozen (small) cookies. 
YUM YUM YUM. These little cookie are SOOOO good and melt in your mouth! mmmmm

$250 Chocolate chip cookies




This recipe started out as the "Neiman Marcus" cookie recipe, but I have modified it to my taste, and convenience. I am so surprised how many rants and raves I hear when somebody eats this cookie. 

Ingredients:
2 cups butter
2 cups granulated sugar
2 cups brown sugar
4 eggs
2 teaspoons vanilla
4 cups flour
5 cups oatmeal (measure, then blend in a blender to a fine powder)
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
2- 11.5 oz bags of GHIRADELLI MILK CHOCOLATE CHIPS


optional ingredients:
3 cups chopped nuts
1 8 oz grated hershey bar

Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips. Roll into balls and place two inches apart on a cookie sheet..Bake for 8 minutes at 375 degrees. Makes 112 cookies. Recipe may be halved.
