Onion Apricot Glazed Chicken

1 envelope Lipton Onion Soup Mix

1 (16 oz) jar apricot jam
1 botle (small) russian salad dressing
5 chicken breasts (or 2 - 2 1/2 pounds chicken parts)

Preheat oven to 350. Blend onion soup, apricot jam, and dressing in a bowl. Arrange chicken in large baking pan and pour on the mixture. Bake basting frequently for 50-60 minutes or until chicken is tender. Serve the chicken and sauce on top of a layer of hot "sticky" (ex. jasmine) rice.

This recipe also works well in the crock-pot on the LOW setting for 6-8 hours, or HIGH setting for 3-4 hours
