White Dinner Rolls:
dissolve 2 Tablespoons yeast into 1/2 cup minus 2 tablespoons warm water for 5-10 minutes (do this in a good sized bowl, the yeast will rise and foam)
in separate bowl mix:
3/4 cup hot water
1/2 cup oil
1/2 cup sugar
3 eggs (beaten)
add yeast to the cooled mixture, then add
2 teaspoons salt
4 to 5 cups flour (one cup at a time, then mix)
knead dough for a couple minutes and let rise for 30 minutes, covered with a dish towel. To form rolls, Use a generous amount of flour on the rolling surface and on rolling pin. Divide the dough in half. With each half, roll into a large circle. With a pizza cutter, cut the dough into half, then half again, then each quarter in half so there are 16 even long triangles. Roll up from outside in. Place on a greased cookie sheet to raise for an additional 30 minutes. Bake at 375 for 10-12 min. Keep an eye on them because each oven will cook them differently. When they come out of the oven, drizzle melted butter on top. These rolls are delicious and best when served warm. This recipe yields 32 rolls.
