Manicotti


Sauce:
1/2 lb. ground beef
1/2 lb. ground sausage
1/2 cup chopped onion
1 large garlic clove, chopped
2 (6 oz.) cans tomato paste
1 T. basil
2 cups water
1 t. salt

Brown the meat, onion, and salt. (You can use 1 lb. ground beef instead of using sausage if you prefer not to use the sausage. But if you use the sausage, use less salt in the sauce. Just season to taste.) Add tomato past, garlic, basil, and water. Simmer while assembling manicotti shells.

Shell Filling:
2 eggs, beaten
8 oz. Mozzarella cheese
1 lb. cottage cheese
2/3 cup Parmesan cheese
2 cups water
1 T. parsley
1 pkg manicotti shells

Cool shells in boiling water for 10 minutes. Drain. Beat eggs; add the rest of the filling ingredients. Stir well. Fill each shell with filling mixture. Line baking dish with filled shells. Cover with sauce and bake @ 350 for 45 minutes. Let stand 10 to 15 minutes before eating.
