Combine:
1/4 cup lemon juice
2 T olive oil
2 T mayo
2 T grated lemon zest
1 T red wine vinegar
1/2 t. salt
1/8 t freshly ground black pepper
add:
3 1/2 cups shredded cooked chicken
1/2 cup finely diced celery
1/3 cup diced cucumber
1/3 cup finely diced red onion
slivered almonds (just before serving)
*Eat alone as a salad, or serve on crescent rolls
