Alfredo and Veggies

This is our favorite yummy sauce to put over whatever kind of pasta!

1 small carton Heavy Cream
2 cloves Garlic
1 tsp Butter
1 Tbsp EVOO (Olive Oil)
1 C. Fresh Parmesan Cheese, grated
1 can/jar marinated Artichoke Hearts, drained and roughly chopped (non marinated OK)
1 head Broccoli (fresh or frozen), cut into bit size pieces
1/2 C. frozen corn
1 zucchini
whatever other veggie (squash, cauliflower, whatever)
Black Pepper
1/2 chicken breast, cooked and shredded or cubed

In a wide, deep pan, heat butter and EVOO and grate/crush in the garlic and let it sizzle. Add cream, stir and bring to a simmer. Mmm, smells good. Throw in veggies and chicken. Simmer, stirring constantly for 7 min or until sauce cooks down. Throw in Parmesan, stir and simmer 2 more minutes. Finish with pepper. Pour over your favorite pasta. Viola! Yummy!

You don't need to feel guilty about the cream because you are getting lots of veggies!
