Sesame Peanut Noodles



8 oz whole wheat spaghetti, (or about half a box)
Cook noodles in a large pot of boiling water until al dente. While they are cooking, prepare the dressing:

2 tablespoons rice vinegar
1/4 cup soy sauce
1/4 cup peanut butter
2 tablespoons grated ginger
1 tablespoon sesame oil
1 teaspoon brown sugar 
juice of 1/2 lime
*then add one ladle-full of the hot noodle water (this will help melt the peanut butter)

Mix the dressing well. When the noodles are done, combine the two together. Then add, 
1/2 bag store-bought coleslaw mix
1/2 cup red pepper, cut into thin strips
1/2 cup cilantro, chopped
1 teaspoon toasted sesame seeds (optional)
2-4 green onions, thinly sliced
1/2 cup peanuts.

Refrigerate mixture for one hour. Enjoy!
