Black Bean & Mango Salsa

2 cans black beans (drain & rinse)

2 cans corn (drain & rinse)
2 cans diced tomatoes with green chilies (undrained)
1 bunch chopped green onions
1/4 C. red wine vinegar
chopped fresh garlic, minced 
1 red pepper chopped
2 T. lime juice or more to taste (fresh limes-microwave for 30 sec., let it cool, cut and squeeze the juice out.  Get more juice out this way).
Salt & pepper to taste

Mix all of the above ingredients well and refrigerate overnight.

Add fresh chopped mango and 1 bunch of finely chopped cilantro the next morning.  
*OPTIONAL:  Add fresh chopped avocado the next morning as well.
