Healthy Bran Muffins

A healthy, fiber and carb packed snack or pre-run breakfast!

*Warning* This makes a big batch!

2 cups water
1 cup grape nuts (boil water and soak grape nuts)

1 qt. buttermilk
2 cups All Bran Cereal
3 cups 100% Bran Cereal
1 cup oil
2 1/2 cups honey
2 eggs
1 Tbsp. salt
4 tsp. baking soda
5 cups whole wheat flour

Mix oil and honey, add eggs, and beat. Add buttermilk, dry ingredients and cereals. Add grape nuts and water, and mix well (don't beat). Chill for 8 hours or overnight.

Bake at 400 for 15-20 minutes.
